Manual picking of cherries. \u003cbr\u003e2. Classification by density \u003cbr\u003e3. Classification by size. \u003cbr\u003e4. Ozone sanitization. \u003cbr\u003e5. Ultraviolet light sanitization \u003cbr\u003e6. Classification of ripe cherries. \u003cbr\u003e7. Characterization of cherries (degree of maturation, brix degrees of the grain, PH of \u003cbr\u003ethe grain and others). \u003cbr\u003e8. The fruits are immersed in water at 90 centigrade for a short time to achieve a \u003cbr\u003ebetter sterilization of the fruits and open their pores. \u003cbr\u003e9. The first phase of fermentation of the fruits begins in anaerobic bioreactors where \u003cbr\u003ethe microorganism is added. \u003cbr\u003e10. Once the first fermentation phase is finished, the shell of the fruits is removed to \u003cbr\u003etake them to other bioreactors and start the second fermentation phase. \u003cbr\u003e11. We recover the juices produced during the fermentation of cherries to add them in \u003cbr\u003ethe fermentation of pulped coffee. \u003cbr\u003e12. After the second phase of fermentation is finished, the grains are again subjected to \u003cbr\u003ehot water impacts to later be washed with cold water. \u003cbr\u003e13. The washed coffee is taken to the ecological drying equipment where the drying \u003cbr\u003ecurve is configured, which for this coffee is 40 degrees Celsius for the initial 12 \u003cbr\u003ehours and 35 degrees Celsius for the last 24 hours. \u003cbr\u003e14. In 36 hours of drying, the coffee reaches the desired humidity of 11% and stored in \u003cbr\u003eplastic bags. \u003cbr\u003e15.
