Introducing: UFO Filter Type A
First release of the UFO Filter lineup is Type A. Type A is NOT a fast flowing filter. We recommend using a coarser end of medium grind size, or 27-30 clicks on a C40.
We also really enjoy Type A with Melodrip. Melodrip does not disturb the coffee bed as much as a regular water flow out of a gooseneck kettle spout, and therefore reduces fines migration. This makes for a very fast drawdown, but grinding super fine to compensate for fast flow rate does not result in a tasty cup.
Same concept applies with many of the heavily processed coffees being showcased these days. Unlike dense washed coffees that produce tons of fines and therefore flow slowly, these coffees that are heavily processed even in green form have damaged cell wall structures which lead to high solubility. This high solubility is great until you realize just how easy it is to over-extract those coffees. This applies to anaerobic naturals, yeast-inoculated naturals, co-fermented coffees, etc.
One of the best ways to enjoy these innovation and process-driven coffees is to grind coarser and reduce the surface area of the coffees to prevent over-extraction. Happy brewing!
Type A was designed to provide medium flow rate. We recommend grinding on the coarser end of medium (850-1,000mu) and starting with our Type A base recipe below.
UFO Filter Type A Base Recipe:
92’C, 12g coffee: 200g water (1:16.67), coarser end of medium
00:00-00:40 50g low flow rate, low spout height, circle pour
00:40-01:10 50g medium flow rate, low spout height, circle pour
01:10-01:40 50g medium flow rate, low spout height, circle pour
01:40-02:30 50g medium flow rate, low spout height, circle pour
Target total brew time is 02:30-03:00.
