Our team at Rogue Wave Coffee is excited and honoured to take part in The Fermentation Project, a collaboration between James Hoffmann and fermentation consultant Lucia Solis.

The Fermentation Project Kit includes 4x 100g bags, each representing a different fermentation method applied to that same lot from Finca San Miguel Urias in Antigua, Guatemala:

  1. Mechanical Demucilagination: Mucilage removed after harvest, with virtually no fermentation. This serves as the benchmark against which the other three are compared.
  2. Wild Fermentation: A traditional 48-hour submerged fermentation relying on the microorganisms naturally present on the cherries and in the environment.
  3. Lactobacillus Inoculation: A 48-hour submerged fermentation inoculated with Lactobacillus bacteria to promote organic acid production.
  4. Saccharomyces Yeast Inoculation: A 48-hour submerged fermentation inoculated with selected yeast to develop aromatic precursors.

What makes this kit so special?

Most people never get to try the base coffee when they get a funky fermentation. With this kit, you really get the opportunity to experience, side-by-side, how fermentation influences the flavours in coffee.

100g gives you the opportunity to not only cup these coffees, but enjoy them as you would usually brew afterwards.

We'll be roasting these beans in such a way that is light enough where you can distinguish the differences between the processes, and that brings out the beans' most inherent, delicious flavours.

Orders containing this kit will ship together once roasting is complete. If your order includes other coffees, gear, or merchandise, the full order will ship at the same time. Local pickup customers will be notified by email when their kit is ready.

About James Hoffmann

James Hoffmann is one of specialty coffee's most recognized voices, known for his award winning YouTube channel and his book, The World Atlas of Coffee. He won the World Barista Championship in 2007 and went on to co-found Square Mile Coffee Roasters in London. For this project, James leads the tasting and communication side. He will be hosting the global live tasting that brings coffee drinkers together to taste the same four coffees at the same time.

About Lucia Solis

Lucia Solis is a coffee fermentation and processing consultant with a background in viticulture and enology from UC Davis. She spent nine years in wine production in Napa Valley before moving into coffee in 2014, and has since worked with producers in more than 15 countries. Lucia designed the four processing methods featured in this kit, applying microbiological principles to explore how fermentation alone shapes what ends up in the cup.

About Caravela

Caravela is a Latin American green coffee exporter that has worked in Guatemala since 2016, building relationships with 23 coffee growing communities across the country. For this project, Caravela handled sourcing, processing, and export logistics, connecting Finca San Miguel Urias to roasters around the world.
