Ombligon means belly button in Spanish and this varietal is so named for the shape of coffee cherry due to its elongated fruit with a belly button shape on the base. However, this coffee is actually a variety of an Ethiopian Heirloom. 

It's called Ethiopian heirloom because it comes from a variety that underwent genetic studies, which revealed it was part of the Ethiopian accessions. The word "heirloom" translates to "tradition" in Ethiopian, so what we mean by that name is that it's a tradition in Ethiopia but grown in Colombia.

Finca La Esperanza is the home place where this coffee is grown, Located in the Southern part of the Huila region, this coffee grows at 1730 MASL. As part of their program in Cafe1959 that process different cherries from different farms, they partnered with La Esperanza in order to create a product that is fruity and easy to drink.

Ethiopian Heirloom embodies the ideal balance of fruitiness, floral notes, and sweetness, evoking the best of Colombian and Ethiopian coffee. Coffee cherries are collected in the ripest stage when there is optimal sugar content (22 Brix degrees) and carefully placed into Grainpro Bags, initiating a 13-hour overnight journey from Huila to Quindio, where the Cafe 1959 fermentation and drying facility awaits.

Traveling during the night helps to control the temperature in the first stage of the fermentation, that takes place in the truck. After arriving at the Clarita station the coffee is fermented anaerobically in sealed tanks for 72 hours. It is then slow dried in whole cherry in the sun on raised beds, milled and then vacuum packaged.
