Hua Chang (Elephant Head) coffee was on a cupping table with many different coffees at one of the cupping session in Thailand while I was there earlier last year. I remember coming back to Hua Chang anaerobic natural cup times and times again to check the quality and thinking to myself "I really want to bring this coffee back to Canada". Later during my trip, I was fortunate to be able to visit the producer of Hua Chang coffee, Nawin Yaesorkoo, with Faudi of Beanspire. On that particular day, I got to visit and help with their yeast innoculation natural process which I hope to bring the coffee for you to try later this year. This particular lot of coffee is process the same way when I was there, using the yeast that you can see in the last photo. This process elevate that sweetness and fruitiness of the coffee.

Hua Chang coffee farm is located in Doi Chang (Elephant peak) is the biggest coffee producing region of Thailand. The area is covered in forest so all the coffee trees are under shade. The micro climate there allows the cherries to ripen more slowly than other farms in Doi Chang. Its volcanic black soil suggests fertility and nutrients, allowing for the production of top quality coffee.
