ALESSA is a plot located in the MIMA ESTATE farm in Alto Quiel at the foothills of the
Baru Volcano, at an altitude of 18500 meters above sea level. It covers an area of
approximately 2 hectares of volcanic soil where Geisha Green Tip grows. It is
adjacent to the protected area of the park, and the coffee grows in a cultivated
forest of Guabos and Cedars with 70% shade.
It was manually harvested on February 6th, 2024, ensuring the cheries harvested were completely ripe. After harvesting, it was taken to their processing facility in Alto Lino Boquete, where it underwent a flotation process to separate out low-density beans.
Then it was mechanically pulped and transferred to fermentation tanks with mucilage where, overnight, the temperature drops to 15 degrees Celsius, and it rises to around 20 degrees Celsius the next morning. This fermentation process was carried out using the wild yeast naturally present in the cherries from the farm. Fermentation lasted 16 hours after which it was washed with pressurized water. The coffee is dried in their greenhouse under the sun on African beds for approximately 7 days. Finally the greens are rested in their temperature and humidity controlled warehouse.
This coffee is named after Alessa, the granddaughter of Eugene (the founder of Altieri), and the daughter of Ximena Arias, who we work with at Altieri.
