Recipe: Brazil Daterra Low Caf Ice Brew

This Brazil Daterra Low Caf Ice Brew recipe is a spin on Ply's Ice Brew recipe and David Walsh's cold brew recipe. You'll find it perfect for a toasty summer afternoon when you want just a little caffeine to carry you through the afternoon.

Similar to Ply's recipe, you can expect a sweeter, jammy, and full-bodied iced coffee. Today, Alexis, the wonderful human who answers your emails, popped down to our cafe to tinker with Ply's recipe.

Because the Brazil Daterra Low Caf is quite nuanced and expressive, Alexis dialled in some of the original measurements to what you see here: 

  • Coffee dripper of your choice
  • Filter Paper
  • 20 grams coffee, medium-coarse grind
    (~7.2 on 1ZPRESSO K-Ultra or K-Max)
  • 200 grams water around 94C
  • 2 carafes (or jars): 1 empty carafe and 1 carafe with 150 grams of ice (if you'd like a more delicate brew, use more ice)

The coffee to water ratio here is about 1:10. There is also no bloom for this recipe, which means you'll pour all of the water in one go!

  1. Place your dripper on the empty carafe.
  2. Wet your filter paper.
  3. Add 20 grams of coffee.
  4. Discard water used to wet filter paper.
  5. Begin one long slow pour. Pour all 150 grams of water over the coffee. The pour should take around 30 seconds and the coffee should take about 1 minute to filter.
  6. After the coffee is filtered into carafe, place the dripper with used grounds on top of the second carafe (the one with ice).
  7. In 2 or 3 pours, pour 50 grams of the freshly brewed coffee into the dripper that still has the coffee grounds in it, into the carafe with ice. This should take about 1.5 minutes. The total brew time should be about 3 minutes.
  8. Pour into a glass and enjoy!!
